- Tomato
- bell pepper
- other peppers and chillis
- garlic
- ginger
- onion
Rice
- olive oil
- onion
- salt
- tomato paste
- paprika
- curry powder
- cumin
- thyme
- black pepper
- turmeric
- basmati rice
- bay leaf
- chicken/vegetable stock
- green onion (optional)
- chopped cilantro (optional)
Directions
- Blend tomato, peppers, chilis, garlic ginger, half the onion, and water until smooth
- Olive oil on medium heat
- Add onion and salt (sauté 4-5 mins)
- Clear space in the middle of the pan and add tomato paste (sauté 2-3 mins)
- add seasoning (cook 1-2 mins)
- turn off heat and stir in rice well
- Add bay leaf and stock
- Turn heat to high
- Add obe and bring to boil
- Cover tightly with foil, then with lid and reduce heat to medium-low
- Simmer (20 mins)
- turn off heat and let sit fo 12 mins
- Fluff rice and garnish with cilantro and green onions
Rice cooker instructions
- make the obe a little stronger taste than usual
- wash the rice very well
- add obe to the rice
- add less than usual water
